English Breakfast

16th of June Djarn and I cooked food for our Grilling Assessment, what we cooked/grilled was a big breakfast (English Breakfast). We had Eggs, Toast, Baked Beans, Spaghetti, Tomato, Mushrooms, Sausages. I cooked the Eggs on a non-stick pan for at least 5-10 minutes same with the Baked Beans. We grilled the toast in the oven 2-3 minutes on each side. After the toast was done we put butter on the toast, then we dished up the English Breakfast onto a place and ate it.

Grilled Steak Sandwich

On June 3rd Braxton Djarn and I made Grilled Steak Sandwiches. We had Steak,Carrot, Lettuce, BBQ sauce, Mayo, Tomato, Cheese. We cooked the steak on a grilling machine. After we grilled the Steak, we started our preparation of the Grilled Steak Sandwich. We didn't have enough time to get a teacher to try it and see what they think, but it was definitely better then the CLub Sandwich we first made during this assessment. This is what it looked like in the end.

Pancake Making

On Wednesday 27th May we made pancakes and they failed, we mixed a bunch of ingredients to make pancake mix, we grilled Bacon in the oven, and we made our own Pancakes by making our own Pancake mix using 1/2 cup flour, 1t baking powder, Pinch salt, 1/2 cup rolled oats, 1 egg, 1 1/2 cups of milk, 1 T melted butter, and we had 4 slices of streaky bacon.
We don't have any pictures of what the final part of the Pancakes looked, but we know we did a good job.
How we knew that the Bacon was done was when it starts to sizzle in the middle and it has a gold colour and and it's nice and crisp

Sandwich making

These are the Ingredients we used for the first sandwich... other known as the Club Sandwich which looks like a double decker sandwich but with a different name. Braxton and I made the Club Sandwich together, we had trouble making it as we didn't know what we were doing. We used White Bread and Whole Grain Bread, for meat we had Ham, Vegetables were Lettuce and Tomato, 2 Hard Boiled Eggs, and we had enough BUtter to be spreaded on at least 6 pieces of Bread for the Club Sandwich.

Hospitality Health and Safety

. Demonstrates high standards of personal hygiene
Clothing and footwear is clean and are prepared to work
Clean hands and nails
All nail polish and jewellery has been removed
Their hair is out of the way (tied or wear a hair net)

. Contagious Illnesses: what to do.
You start to come down with a cold or flu on a day you had been scheduled to work?
Call the manager/boss and notify him that you are possibly getting a cold and stay home until you are ready to go back to work.

You start to feel ill while you are at work and have to rush to the bathroom suddenly. You then suffer from vomiting and diarrhea for the next 15 minutes?
Get somebody at work to go tell the manager that you are sick and then get somebody to drop u off at home so that you don't get anyone else sick or you don't put any puke on the food.

You think you might have Hepatitis A?
Tell the manager that u might have Hepatitis A and check if it has spreader through anything else, suggest to get a new clean water system installed.

Work habits that help prevent contamination:
Using disposable gloves when preparing or handling food.
Using clean utensils to prepare, handle or sample food.
Using hygienic hand drying facilities.
Using tongs when handling food.
Personal habits that may cause contamination:
Touching nose or mouth when preparing or handling food.
Touching hair when preparing or handling food.
Scratching yourself when preparing or handling food.
Spitting in food preparation, storage or handling areas.

.Pests:
List of pests that can cause food infestation.
Weevils,Rats,Mice,Birds,Beetles,Moth,Dogs,Cats ETC
Explain how a food business could prevent the following pests from becoming an infestation threat.

.Insects: Look carefully at the food to see if it looks like there is anything dodgy about it, double check if everything is clean because if it's not clean it can attract insects.

.Rodents: Pick up food from the ground and put it in the scraps bin, this is useless but look through the security cameras in the kitchen if there are any Rodents roaming around and keep some rat traps handy just in case.

.Birds: Look for holes on the roof outside the building and inside the building and look for holes outside and inside the building walls, when located any holes get some type of wire and cover the holes with the wire or get a hammer and nails and a piece of wood and cover the holes with wood using nails and hammer.

.Dogs/Cats: Just don't bring your pet to the food facility.

Hospitality 2020

Every Monday and Thursday we are doing a practical when all of the groups cook something, and we get people to try the food we cooked and ask for feedback and what they liked about it and what we can improve about it. On Monday the 10th of Feb 2020 we attempted to cook Satay Chicken which in my perspective didn't look the best. Before we started cooking we washed out hands with soap, we put on aprons so that we don't get food on our clothes, and we wiped the tables for extra safety. During the practical we were washing and drying the dishes as we go so we can reuse the equipment that we have used, and I learned how to work the elements on the stove, what I did was make the Satay sauce and I cut and cooked the chicken while Ben was working on the rice. After the practical we washed and dried the dishes, we dished up our Satay Chicken onto a plate, and we tried our food, which I think didn't taste the best, we didn't offer anybody our food because we just think that it wasn't as accurate as we wished but we did our best, unfortunately, we didn't get any photos but on Thursday we should hopefully get some photos.

On the 17th of Feb 2020, we attempted to cook some kind of Noodles which didn't turn out the best, I couldn't eat it because there was fish sauce but that's calm. Surprisingly people wanted to eat our food but didn't get feedback which is all goods, I was in charge of the sauce and it didn't look as it did in the picture. I need to start remembering to bring tongs with me when I go to get the meat, hopefully, the next time we cook something it turns out good instead of looking like a big mistake.

We've cooked Beef Burger Pitas which has so far been the best that I've been able to cook the best out of the foods that I've cooked so far, and they were actually eatable, I forgot to add some oil into the pan at the start but then we saved it and put the oil in then started cooking the patties again, I made the patties by grouping some mince and other ingredients together and with my hands, I grabbed out some pattie mixture and started beating the mince with my hands till they look like beef patties, I feel like the only thing I've been able to cook properly is the Beef Burger Pitas.

We cooked Spicy Chicken Enchiladas and they turned out kind of good until the end when they fall apart, the Chicken was dry and we forgot to put the salad into the Enchiladas and it tasted horrible. I feel like my cooking skills have gotten worse since the Beef Burger Pitas that was the only good food I've managed to cook. hopefully, I can start getting better at cooking don't know when that'll happen but hopefully, I make it happen

Recently we made a Potato salad with Bacon, Potatoes, Egg, etc. We decided to add some salt and pepper but I decided it'd be ok to add a lot of salt and pepper, even though it had a really strong taste it still tasted good, maybe calm down on the salt and pepper next time and have a bottle of coke around for safety reasons.
